We have all heard that breakfast is the most important meal of the day, but why is that? Well, it gives you the kick start to your metabolism as well as gives you energy to get you through the morning. But we also want to make sure you are choosing healthy options and avoiding foods that provide empty calories and little to no nutritional value. Those who eat a healthy breakfast benefit both physically and mentally, which is why eating breakfast is so important to young children who are in school. No matter what your schedule looks like, you are always able to include breakfast even if it is not a sit-down meal. You can make some healthy grab and go options available. Keep it simple, prep the night before, and plan for it while grocery shopping.

Breakfast Bagel Sandwich – serves 2

  • 2 patties, sausage or bacon
  • 2 whole grain bagels, sliced in half
  • 2 large eggs
  • 2 slices cheese
  • 1 large avocado, sliced or mashed
  • 1 cup spinach

Prepare meat in skillet, according to package directions. Remove from skillet, drain fat and place bagels sliced-side down in skillet. Toast over medium heat until lightly browned. Remove from skillet and set aside. Slice or mash the avocado and set aside. Cook eggs in the same skillet. Layer each breakfast sandwich as you like, serve and enjoy!
